Happy Valentine's Day

Last week I invited a few of my friends over for coffee and bon bons.  You know.... that's what we stay at home moms do, right?  Watch tv and eat bon bons.   So after 9 years of this gig I thought, hey, why not try it out?  I found some recipes and started making bon bons.  The recipes were scrumptious and they were SUPER easy!  The family loved them so much that my little man asked me to make more for his class Valentine's day party.  They seem to have the seal of approval from adults and children alike.

Bailey's Irish Cream Bon Bons
1 Pound white chocolate
1/2 Cup unslated butter (room temp)
1/4 Cup whipping cream
1/4 Cup Bailey's Irish Cream
1 Cup finely shredded coconut.  (I toasted mine)

Melt chocolate and cool.  Beat butter and cream intil fluffy. 
Add Bailey's Irish Cream & mix.  With mixer running (on low speed)
add the melted chocolate (slowly) and mix well.  Cover & Refregerate until cool.
Drop by teaspoonful into coconut & form balls. 
Makes 4-5 dozen

Cheesecake Bon Bons

1 (11.1 ounce) Package of Jello-O No Bake Cheesecake
1 Cup cold milk
1 package of dipping chocolate

Beat cheesecake filling mix & milk with electric mixer for 3 minutes.  Stir in 1 Cup of the crust mix.  Pour filling mixture into large bowl ; cover. Refridgerate 1 hour.  Roll filling mixture into balls. (approx. 30) with moisened hands, using about 1 TBS of the filling mixture per ball.  Freeze 2 hours.  Melt dipping chocolate Dip frozen cheesecake balls into chocolate turning to coat completely.  Freeze additional 2 hours or until chocolate is set.

Oreo Bon Bons
1 Package Oreo cookies
1 Package of cream cheese (8 ounces)
1 Package of dipping chocolate

Crush Oreo cookies in food processor until very fine. (powdery)
Add softened cream cheese.  Work well with hands or mixer.  Chill mixture 1 hour.  Roll into bite-sized balls.  Dip into chocolate and let dry.  Keep refrigerated.

Little miss had a "Love Bug" performance at school.  This is one of her new FAVORITE songs!
