Bake Sale

Yesterday, I waited for Dylan to come home from school before starting to make any goodies for the bake sale. He was thrilled to find out that he was going to be able to make it ALL with me. His face alone made it feel like we were making 15 different recipes. In fact, we were only prepared to make 3. We hit the ground running and went to work. Start to finish we baked for 4 hours straight. By the end Dylan was willing to allow me to decorate the pumpkin bars turned mini muffins and without fail he allowed me to do the clean up. :) Imagine that!

All in all we only had to throw one batch of ingredients away when I did not double check how much baking soda and baking powder Dylan put it. When I asked him which spoon he used he could not remember. They do look the same… so off to the trash that batch went and we started again… this time with my eye on the spoons. We finished the night with 3 YUMMY recipes and they all passed the taste test performed by none other than… me. Boy, I love my job!

Here is what we made....


Island Cookies
1 2/3 C flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 C butter, softened (1 1/2 sticks)
3/4 C brown sugar
1/3 C sugar
1 tsp vanilla
1 egg
2 C white chocolate chips
1 C flaked coconut
3/4 C chopped macadamia nuts
1 C craisins

Combine ingredients and bake @ 375 for about 10-12 minutes.
Pumpkin bars or
Little Bites of Pumpkin Perfection!
1 C oil
2 C sugar
2 C Pumpkin
4 eggs
2 C flour
2 tsp baking powder
1 tsp baking soda
1/2 salt
2 tsp cinnamon
1 tsp pumpkin pie spice
Combine ingredients and bake.
For bars: bake @ 350 for 20-25 minutes for bars
For mini muffins: bake @ 400 for 12-15 minutes.
Let cool and top with cream cheese frosting.
Unbaked Chocolate Cookies...
or what I like to call pure Chocolate Delight!
2 squares of unsweetened chocolate
2 C sugar
1/2 C milk
1 stick of butter
1/2 C peanut butter
3 C oatmeal
Bring first four ingredients to boil. Boil 1 minute. Add peanut butter and oatmeal. Drop by spoonfuls on waxed paper and let cool.
